Ingredients:

300 g dried penne pasta
Olive oil
1 onion, chopped finely
1 garlic clove, crushed
3-4 sprigs of fresh thyme
5 slices of bacon, cut into chunks
1 tsp crushed chillies
400 g tinned tomatoes
1 1/2 tsp caster sugar
1 tbsp finely chopped fresh parsley
2 large handfuls of grated cheddar
Salt
Pepper

Step 1: Cook Your Pasta
Preheat your oven to 200°c. Bring a pan of salted water to the boil and add your pasta. Cook to the instructions on the packet, and then drain. Return your pasta to the pan.

Step 2: Make The Tomato Sauce
Heat some oil in a large frying pan. Add you chopped onion, garlic and thyme to the pan, along with your sliced bacon. Move the ingredients around the pan to ensure they cook evenly. Once the bacon begins to crisp up, sprinkle over some crushed chillies and pour in your tinned tomatoes. Give everything a good mix. Season with salt and pepper and sprinkle in one-and-a-half teaspoons of sugar. While the sauce is simmering, finely chop up your parsley and add it to your pan. Leave to simmer for another 3-4 minutes.

Step 3: Combine The Sauce And Pasta
Pour your tomato sauce over your drained pasta and mix well to ensure all the pasta gets coated. Pour the mixture into your dish and then top with grated cheese. Cook for 10-15 minutes until all of the cheese has melted and has begun to turn golden brown. Serve on its own or with a side salad.
You'll Need:

# 8 oz.(225g) tomatoes, peeled and sliced
# 4 oz. (100g) cooked spaghetti
# 3 oz. (75g) grated cheese
# half a pint of white sauce (See Hookery Cookery Healthy Eating section)
# 1 egg
# salt and pepper
# pinch of tarragon
# pinch of sugar

Procedures : # Place half the tomatoes in a greased ovenproof dish
# Add salt and pepper, a pinch of tarragon and a pinch of sugar
# Cover with half the spaghetti and half the cheese
# Repeat the layers finishing with cheese, reserving a little to sprinkle over the dish before baking
# Make up the white sauce, cool a little then add the beaten egg
# Pour the sauce over the top and sprinkle with remaining cheese
# Bake for about 25 minutes in a moderate oven (325F, Gas Mark 3, 170
