Who says dessert needs to ruin your healthy eating plan? Not me! With juicy fruit always at arm's reach, summer is the best time to toss some natural sweets together for a gorgeous treat. I've added flecks of toasted coconut, a spritz of lime juice, and a few fresh mint leaves, and the result is almost too beautiful to eat!
Sarah's Tip of the Day:
This recipe couldn't be simpler. Just arrange sliced pineapple and strawberries on a platter before topping with lime zest and juice, mint leaves and toasted coconut flakes. The flavors on this plate remind me of a bright and festive fruit cocktail -- so serve it up with a pitcher of your favorite mixed drink!

You'll Need:
2 cups peeled, diced ripe mango
1 cup chopped fresh pineapple
1/4 cup dried cranberries
1/4 cup flaked coconut
1/4 sprig chopped fresh mint
Procedures : In a medium bowl, toss together mango, pineapple, cranberries, and coconut. Garnish with mint.
Cover, and chill in the refrigerator until serving
