Rigatoni Pasta tossed with Broccolini and
Roasted garlic and red chili pepper oil topped
With shaved Parmesan
Serves 8-10 people
Ingredients
1 16oz box of Penne (cooked as directed and then cooled down to room temperature in a large serving bowl)
2 bunches of broccolini
1- cup olive oil
2 tsp. chopped fresh garlic
1 tsp. red chili pepper flakes
1 cup of shaved Parmesan
Salt & Pepper
Directions
1. In a small saucepan place olive oil, garlic & pepper flakes bring to a boil and simmer until garlic is golden. Remove from the heat, and cool until room temperature.
2. Cook the broccolini in a large pot of boiling salted water for 2 minutes, then drain into a colander and place onto a platter. Let cool down until room temperature.
3. On a cutting board chop the broccolini into small pieces.
4. Add the chopped broccolini to the pasta, and then add the garlic chili pepper oil, salt and pepper, and finally the Parmesan. Toss all the together and top it off with more Parmesan. Serve and enjoy the love.

8 oz pasta Rigatoni
1 1/2 cups cubed cooked turkey
1/4 cup chopped onion
1 cup thinly sliced carrots
1 cup frozen peas, thawed
2 tbsp vegetable oil
2 tbsp cider vinegar
1/4 tsp thyme
1/4 tsp salt
1/4 tsp pepper
Procedures : Prepare pasta according to package directions, drain and rinse with cold water. Drain well.
Combine turkey and vegetables in a large bowl. Add pasta.
Combine oil, vinegar and seasonings in a jar. Shake until well blended.
Pour over pasta and stir well. Cover and chill until ready to serve
