Thai Spring Rolls with Peanut Sauce
8 rice paper sheets
16 jumbo raw shrimp, de-vined and tails removed
1 cup julienne cut zucchini
1 cup julienne cut red bell pepper
1 cup julienne cut carrots
2 tablespoons fresh parsley, chopped
1 green onion, chopped
2 cups prepared rice/bean noodles
For sauce for cooking:
5 garlic cloves, finely minced
1/4 cup fresh ginger, finely minced
2 tablespoons brown sugar
1 teaspoon fish sauce
1 teaspoon sesame seed oil
1 teaspoon chili oil
¼ cup tamari sauce
For peanut dipping sauce:
¼ cup peanut sauce
2 green onions, diced

Thai Spring Rolls with Peanut Sauce

For sauce for cooking:
5 garlic cloves, finely minced
1/4 cup fresh ginger, finely minced
2 tablespoons brown sugar
1 teaspoon fish sauce
1 teaspoon sesame seed oil
1 teaspoon chili oil
¼ cup tamari sauce
For peanut dipping sauce:
¼ cup peanut sauce
2 green onions, diced
1/2 cup chopped stuffed olives
1/2 cup finely chopped celery
2 medium onions, finely chopped
1 tablespoon sweet pickle relish
1 pint mayonnaise
2 tablespoons chili sauce
1/2 teaspoon horseradish
2 hardboiled eggs, grated
1 tablespoon Worcestershire sauce
Red pepper, to taste
Tabasco� sauce, to taste
Procedures : Drain chopped vegetables between layers of paper towels. Stir vegetables into mayonnaise. Add chili sauce, horseradish, eggs and Worcestershire sauce. Add red pepper and Tabasco� sauce to taste and blend well. Chill and serve with boiled shrimp.
Yields about 5 cups
