Sweet & Spicy Grilled Acorn Squash
Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour 15 minutes
Servings: 4
Ingredients:
1 acorn squash
1⁄2 cup butter melted
1⁄4 cup maple syrup
2 tablespoons hot sauce
1⁄2 teaspoon salt
1⁄2 teaspoon butter
1⁄2 teaspoon cinammon
Instructions:
Preheat the oven to 350 degrees F.
Cut each acorn squash into 4 equal sized pieces and remove seeds.
Brush the cut side of each acorn squash with canola oil and sprinkle with salt and pepper. Place squash on a baking sheet and bake until almost tender, about 30 minutes.
While the squash is baking, combine the maple syrup, butter, hot sauce, salt, pepper and cinnamon in a medium size bowl. Prepare your grill for medium-high heat. Place the squash, cut side down, on the grill for 5 minutes until lightly charred. Rotate squash to grill each cut side for an additional 5 minutes. Place the squash skin side down and brush with the glaze. Grill for 5 minutes until the sauce has set. Remove from grill and drizzle with any leftover glaze. Serve warm.
Tips:
Mash up any remaining squash and serve as a casserole. Delicious!

1 tsp olive oil
2 cups chopped red bell pepper
1 cup chopped onion
2 cloves garlic, minced
1/2 cup no-salt-added chicken broth
1 tsp dried basil
1/2 tsp salt
1/8 tsp crushed red pepper
3 cups cooked spaghetti squash
Vegetable cooking spray
1/2 cup finely shredded reduced-fat sharp Cheddar cheese
Procedures : Heat oil in a large non-stick skillet over medium-high heat. Add bell pepper, onion, and garlic; saut? 3 minutes. Add broth and next three ingredients; cook 4 minutes or until liquid almost evaporates, stirring frequently. Remove from heat; stir in squash. Spoon mixture into 1-qt casserole coated with cooking spray; sprinkle with cheese. Bake at 350? F. for 15 minutes or until thoroughly heated
