Gino De Blasio пишет: Chicken stock in sugo di pomodoro... No Italian recipe, especially from the south where a sauce of this nature has this labelled. It really is a twist that is rather quite disappointing from "Italians" that should know better.
alison psaila пишет: Hi I was wondering if not adding any sugar would make the sauce taste a little bit acidic/bitter? Your videos are fantastic keep them coming :-)
toonczyk пишет: Tomato sauces need sweetness, either add a bit of sugar or put some balsamico in (it's nice and sweet). Also I'm not a big fan of putting my knives against metal, so instead of cutting tomatoes in the cans I just crush them with my hands over the pan.
Also, classic arrabbiata has no meat in it, just a basic tomato sauce with chili peppers and served with parsley.

Lissagirl99 пишет: One of Jamie's passions is getting people back into home cooking. If there is a way to make it easy and get people learning cooking skills then I would think he would be all for that. As for the tomatoes, I know for a fact that he has no problem with tin tomatoes. (I know this directly from one of his cookbooks that I own.) These recipes are better than someone giving up and eating fast food or a microwave dinner and they are learning basic cooking skills as well. :)
The Chiappas пишет: Great tips! We often add some sugar depending on the quality of tomatoes (they can vary in taste even from tin to tin - sometimes sweet sometimes sharp)... however we've not tried adding balsamic so will give that a go next time! Thanks!
Conc1601 пишет: beautiful..!! not talking about the food
Caroline Cheung пишет: Great video! I always thought pomodoro needed to be simmered for a long time but ill def try the arrabiata after work tomorrow.
The Chiappas пишет: Rio Mare is an Italian Tuna which is stored in Olive Oli and we think it's got a really delicious taste. Give it a go and let us know what you think. You can find it in many Italian delis or try ordering it online on the niceislife Italian deli website

hesebs пишет: My children love it with tuna and green olives!
zev16 пишет: Hold on: who said Italians don't use sauces with pasta is clearly not an Italian or he just can't cook! If you go in any school/university/workplace canteen you can find pasta al sugo or pasta al ragù (bolognaise for the foreigners) everyday, among other fancy pasta sauces that change day by day.
I grew up eating "sauced" pasta for lunch at least four days a week, and so did all my friends ;)

Peter Kirchem пишет: Quite ... and surely a dash of sugar to kill the acidity? Sugo di pomodoro al'Inglese!

Slash Elio пишет: why don't you use the mortar to crush the garlic :/ ? it's much easier than the flat blade!
hkitty383 пишет: Yes, but it's easy. The modern family has to know how to cook quickly for themselves and for the kids, if they have kids. I think the Chiappa Sisters are lovely, and giving a fresh look at classics. If you want truly authentic recipes, just look at Jamie's older videos or search it on youtube. It's not that hard.
Serathedreamer пишет: Been wanting to try this ever since I watched this and just made it for lunch! Yum. Thanks for an easy to follow and tasty recipe:)
Danyal Elia пишет: Oh shitttttt
Zoe Gregg пишет: If you want the tomatoes chopped a little bit better, scissors into the can, rather than a knife, works well.
mertandjmoney33 пишет: I'm going to try this recipe very soon!!! I love spaghetti and pasta, but the price of it in a jar sometimes is too expensive. Now, I can make my own! Thanks ladies!!
skad839 пишет: Why was this disliked so much?
The Chiappas пишет: Lots of you are debating whether our sugo is an Arrabbiata or Amatriciana"....well this is how we do our Arrabbiata in the Chiappa household. Technically an Arrabbiata sauce doesnt have meat/pork in it but we can't resist adding some salty pancetta as it complements the chili brilliantly and the men love the extra protein :)
Peter Fitzsimmons пишет: You mentioned in the larder, "Italian tuna." What's the difference between that tuna and the tuna you see in the local supermarkets in the UK?
Narwhals YO пишет: Italians prefer pasta pure not all the unnecessary products but the traditanol topings are used a lot
Tom Lakin пишет: I disagree. Salt and the flat of a knife is how I was taught, it's the best way to get an even mince (not crush, mince) quickly.
Mudya Faisal пишет: Hey guys where do you buy your Italian tinned tuna?
Gurugu61 пишет: Everytime !!!!!!
The Chiappas пишет: thanks you for following and trying our sauce :) Glad you enjoyed it
MrRaphiskate пишет: are you pregnant ?
The Chiappas пишет: Thank you! We use a really good quality tinned tomatoes so they are really sweet and tasty so didn't need to add sugar, but if you find that your sauce is acidic (and we have in the past) you can absolutely add a little.
Alin Marginean пишет: Why couldn't you just say parsley?
Shriranga Wirth пишет: I prefer eating my pasta without a sauce but rather with some yummy veggies and/or mushrooms fried and simple, I also heard from a couple of italian friends that Italians usually don't eat pasta with sauce but I don't know whether it really accounts for all of Italy..
Nico Steiner пишет: Thank you for this nice video. What do you crumble into arrabiata sauce to remove water? I always understand "stock". I can't find find the reciepes on thechiappas-dot-com website.

buttagal пишет: agree. i never heard of using chicken broth cubes in tomato sauce? odd.
The Chiappas пишет: You can but make sure they are juicy and ripe tomatoes. We would probably use 4-5 medium tomatoes for 2 people. Happy cooking :)

- Water to the egg level for ? pound flour
Procedures : Place the flour and tomato paste in the bowl and lock the cover in place.
With the machine running, slowly pour in the water, as explained in the "General Procedure". Add more water or flour as needed, letting the machine run for a minute after each addition. When the dough is of the correct consistency, let the machine run until the dough is properly kneaded and an even color.
