Apple-and-celery Salad

Green Apple and Celery Salad with Mustard Honey Dressing - Superfoods

INGREDIENTS

DRESSING:
1/4 cup lemon juice
1/4 cup Dijon mustard
5 teaspoons honey
2/3 cup extra-virgin olive oil
salt and pepper to taste

SALAD:
1 bunch chopped celery
2 or 3 diced Granny Smith apples
3/4 cup walnuts


INSTRUCTIONS:

FOOD PREPARATION:
Slice apples. Peel, cut into quarters, cut out core, thin slices
Prep celery. Separate ribs, wash, cut off tough bottom 2 inches. Slice celery in thin slices on the diagonal. slice leaves too. they're good.
Toast walnuts in a small pan on low heat. stir regularly. take off the heat as soon as they're toasted

COOKING:
In the large bowl, make the dressing. You'll make it in the bottom of the bowl, then toss the salad in it.
All dressing ingredients, except the salt and pepper in the bowl
Whisk it until it's really well combined
taste a little on a piece of celery. If it needs salt/pepper, add them.
Add celery, leaves, apples, and walnuts to a bowl
Toss with dressing

You'll Need:

1 cup of apple (peeled and cut in half-inch cubes)
? tablespoonful of lemon juice
French or mayonnaise dressing as desired
? to 1 full cup of tender celery (inner stalks cut in one-fourth inch slices)

Procedures : To prepare this Apple-and-celery Salad Recipe, first mix the apple and lemon juice, to keep the apple from discoloring, then mix the apple and celery with French dressing. Use lemon juice instead of vinegar, in making the dressing, and allow for the lemon juice poured over the apple when it was cut. Instead of French dressing, mayonnaise may be used. One-fourth a cup of walnut meats, broken in pieces, may be added with the celery
