Eggplants with garlic and tomato

my Wife's Garden - Tomato Eggplant Chilli Lizard Egg Garlic Cilantro Coriander Onion Strawberry

The weather is about 105 F or 41 C with and 15% Dew Point, so i just didn't know how the baby plants that my Wife grew from seed would do. It helps that she transplanted them from a pot to a large flower bed. It also helped that she put the baby plants in mostly shade. That was a crazy Egg that she discovered & we got some big(~8 inches) wild lizards in our backyard. So maybe it was an egg from one of them. i think the egg was too big to be a lizard, more like a bird, but i'm not going to break the egg to find out. We'll see :)

Many of the things i do are either done wrong or incorrectly. Doing things the incorrect way is probably what made me paraplegic in the first place. Trees been able to tap into a water line underground or reach into neighbors pool, because we've never had to water that tree. On the other side of the tree is our shed, so that provides some shading too. She wants to move the shed because it probably has some very rich soil beneath it. This extra sunlight would be hard on her baby plants though. Take it easy Danzbutrfly :)

So maybe she just wants to get this watering done as fast as possible without "burning up". i'll tell her that the basil is very sensitive to this high water pressure from the hose. Maybe that's why the Marigolds don't look so good also. She has some grow netting you're referring to, blocks out 40% sunlight, she just hasn't set it up yet. Hope you're enjoying your weekend :)

If I had a larger garden that's what I'd do so then I could have it on a timer and it'd water the garden for me. Luckily she started planting the seeds when it was cool outside & also when the nights did not get below freezing anymore. At first planting & growing these baby plants from seed was very relaxing but it is a little less enjoyable with outside temp over 100 F or 38 C. Have an angelic day :)

It needs to slowly get water. My basil gers bruised if i have too much water pressure on them and if sunlight is an issue they make grow netting to block the heat/ sun but looks good to me! You'll Need:

* 4 large round eggplants, cut along side in pieces
* 4 tomatoes, mashed
* 6 garlic cloves, mashed in a mortar or with a fork
* 50 ml vinegar
* Salt
* Pepper
* oregano
* cheese (ladotyri from Zakynthos should be used. Use a slightly piquant cheese if ladotyri cannot be found)
* olive oil

Procedures : Fry eggplants in plenty of olive oil. Eggplants absorb plenty of oil. Fry until eggplants get brown and tender. Add water if you do not want to use too much oil. In another saucepan heat olive oil (much less than the portion that you use for frying the eggplants) and add tomato mash and half of the garlic. Add salt and pepper for taste and bring to boil. Add eggplants into the saucepan and simmer for 10 minutes. While you simmer the eggplants with the tomato and garlic whiz in a blender the vinegar with the rest of the garlic. When eggplants are ready, remove from heat and pour the vinegar and garlic mixture over them. Season eggplants with oregano and stir them well. Cut some medium size pieces of cheese and add into the saucepan. Let cool and serve
