Pan Seared Fillet of Salmon with Orange Gremolata and Orange Butter Sauce
Описание:
An old video with a recipe of mine for a delicious pan seared salmon dish with an orange gremolata and finished with an orange butter sauce. Enjoy!
For two portions:
2 ½ lb Skin on salmon fillets
½ cup orange juice
¼ cup orange zest
¼ cup minced parsley
3 tbsp capers
1 tbsp minced garlic
2 tbsp unsalted butter
¼ cup minced shallot
2 tsp white wine vinegar
Extra virgin olive oil
Salt and pepper to taste
Start by preparing your gremolata:
In a bowl add the orange zest, minced parsley, capers, minced garlic, 1 tsp extra virgin olive oil and salt and pepper to taste. Mix everything up and set aside.
Prepare your sauce at this point by adding into a pot the orange juice, shallots and white wine vinegar. Bring to a boil then drop to a simmer. While the sauce is simmering, prepare your fish.
With a sharp knife, score your fish by making shallow diagonal cuts through the skin being careful not to cut too far into the meat.
Gently coat your salmon with olive oil and then sprinkle your salmon pieces skin side up with salt and pepper to taste making sure to get some salt and pepper well between the cuts on the skin.
Warm a non stick pan over medium high heat then add some extra virgin olive oil in the pan, enough to lightly coat the bottom. Wait for your olive oil to heat up and start smoking slightly.
Add your salmon pieces in the pan skin side down, season the bottom side with salt and pepper to taste. Sear the skin of the fish for 3 or 4 minutes to allow it to become nice and crispy.
When the color has changed half way up the fish, turn the pieces over and cook for an additional 2 minutes. While the fish is finishing cooking, add the final touches to the orange sauce that was left to simmer.
Add 2 tbsp butter into the sauce and melt. Mix until your sauce has acquired a nice silky consistency, taste and add salt and pepper to taste if necessary.
At this point your fish should be finished cooking, remove from the pan and plate up your dishes.
Serve by pouring some sauce on a plate, place your fish on top and sprinkle with the gremolata created earlier.

Ah ah we are kind of link-minded ^^ I am also buying organic salmon now, and not the wild type anymore. Better eat a salmon raised in a tiny pool but fed radioactive-free food (or I hope so !)
The fukushima incident is indeed traveling to us by air and by sea :/
By the way, once again, your cooking skills are impressive, this salmon looks delicious !
